  mononesh das : হাওয়ার মিঠাইয়ের কথা মনে পড়ে মুক্তাগাছার শহরতলী গ্রাম মুজাটির স্মৃতি ঘিরে । কাঠের টোলে রাখা বাল্যশিক্ষা বই ।চেয়ারে বক স্যার আমি পিড়িতে বসে পাঠদান পাঠ গ্রহন চালিয়ে যাচ্ছি । এরই মাঝে হাওয়ার মিঠাই বিক্রেতার হাঁক । কানা পয়সা, পাচ পয়সা, এক আনা দুই আনা যা আছে তাই নিয়ে ভোদ্রৌড় । বক স্যারের বারণ কানে নেয়ার টাইম নেই । হওয়াই মিঠাই ছিল বাচ্চাদের সখের মজার বেসাতি খাবার । দিনভর খেলেও পেট ভরবে না এমন । আজ হঠাৎ ফেসবুক ওয়ালে সহকর্মী ইত্তেফাক ফুলবাড়ীয়া সংবাদদাতা আবুল কালাম একটি ছবি পোষ্ট দিয়েছেন ।এই দেখেই মূলত লেখা । কালাম ভাল ছবি তুলে । আমি ওর একটি ছবি কাজে লাগিয়েছি । হাওয়াই মিঠাইয়ের মত আরো কিছু মিঠাই খাবার ছিল । এখন খুব একটা চোখে পড়ে না । জানা যায়, ১৪শ’র দশকে ইউরোপের ইটালিতে আখের রস সংগ্রহ করে জ্বাল দিয়ে ঘন করা হত । সেই রস হাতে মিশিয়ে তুলোর মত মিহি করে পারিবারিক পরিবেশে তৈরি করা হত । এরপর মেশিনে এটি তৈরি হয় ১৮৭৯ সালে আমেরিকায় । খুরমা, সাজ , বাতাসা, কটকডি গজা, তক্তি, লাড়ু– বা লাড্ডুর মত মিঠাই যা ছিল আবহমান কালের চিরায়ত বাংলার শ্রেষ্ঠ শিশু খাবার মিঠাই । শিশুদের মত বুড়োরাও মিঠাই প...
